Corey Laub moved to Chicago in 2016 looking for the perfect opportunity for his career, and has found it as the Executive Chef of NOVO. Before finding his way to Chicago, he spent years working for amazing restaurants in the Washington D.C area, including time spent at Aida Bistro, Wine Market, 701 Restaurant, Firefly, Beuchert’s Saloon, and most recently at Lincoln.

Born and raised in Columbia, Corey learned to appreciate all the styles of food in the greater D.C. area. It's this experience that brings him to NOVO with passion for food and a drive to thrill each and every guest of the restaurant.
